Our Kitchen Table!

Here is our tested recipes that even our 3 year old son loves!!!
It is sometimes a scramble to try to get them to eat the right amount of carbs per meal I know... I am not into fancy suppers that take you hours to make.  These recipes from our kitchen take 45 minutes or less!
Enjoy.. and leave a comment after you have made some of these to let me know how your family liked them as well!

Chicken Parmesan on Spaghetti
total carb count for this is 28g

1/2 c - Cooked Spaghetti  ( 15g of carbs)
1 - Chicken Finger (13g carbs using Hampton House Chicken Fingers from costco.  Other Chicken Fingers will vary)
1 - can of crushed tomatoes
1- small onion, diced
2- cloves of garlic, minced
salt, pepper, italian spices to taste

( if you are making this for your whole family just make enough pasta and chicken fingers for all of you...)

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Bake Chicken Fingers as directed on packaging.  While Chicken Fingers are baking, sauté onion and garlic in a large sauce pan.  Once onions become translucent, add in the can of crushed tomatoes.  Simmer for about 15 minutes.  Bring a pot of water to boil, and cool spaghetti as directed.  Taste your tomato sauce and season as needed.  Once Chicken Fingers are finished cooking, slice into strips.  ( 1 Hampton House Chicken Finger makes 3 slices)
Add these Chicken Strips to your sauce , allowing the sauce to penetrate the Chicken.  Once Pasta is finished, drain and mix into sauce.
Measure out 1/2 cup of pasta and 3 slices of Chicken.  Place on plate and sprinkle as much Parmesan Cheese on top as you want! Why not? Its FREE!!!
Enjoy!
